Ingredients for Making Vegetable Soup on Carp Broth

  1. Carp (tails, heads) 700 grams
  2. Water 1.5 liters
  3. Bay leaf 1 piece
  4. Allspice 6 peas
  5. Salt to taste
  6. 2 cloves of garlic
  7. Onion 100 grams
  8. Leek 100 grams
  9. Vegetable oil 2 tablespoons
  10. Carrots 100 grams (weight after peeling)
  11. Parsley root 50 grams (weight after cleaning)
  12. Celery Root 50 grams (weight after cleaning)
  13. Potato 400 grams (weight after peeling)
  14. Vegeta 1 teaspoon
  15. Parsley (dried) to taste
  16. Marjoram (dried) to taste

  • Serving 5-6


Saucepan, frying pan, spatula, kitchen knife, sieve, ladle, cutting board, knife for cleaning vegetables.


Step 1: wash the carp.

Clean fish heads from gills and eyes. Rinse well.
Transfer parts of the carp to the pan, fill with cold water and leave on 15 minutes.

After 15 minutes, drain the water, rinse the pan and pour clean water in volume 1,5 liters. Add the washed heads and tails of the carp to the pan.

Step 2: prepare the broth from the carp.

Add bay leaf, allspice, black pepper peas, a little salt and peeled garlic cloves and onions.

Put everything on fire and cook for 60 minutes.
After catching spices, onions with garlic and parts of carp from the broth. Strain the liquid through a sieve a couple of times to accurately filter out everything that is not needed.

Step 3: peel the vegetables.

Cut leek into rings.

All other vegetables (carrots, potatoes, parsley and celery) must be peeled, washed and cut into medium-sized cubes.

Step 4: fry the vegetables.

Heat a couple of tablespoons of vegetable oil in a pan and send the leek to fry until soft.

When the onion is softer, add other vegetables to it. Fry everything together, stirring, for several minutes.

Step 5: cook the vegetable soup.

Return the filtered broth to the stove, boil, and then pour the vegetables into it and add Vegeta.

Simmer vegetables for 15 minutes, that is, until complete readiness. And at the very end of cooking, add dried marjoram and parsley to the broth.

Stir, check for salt and serve hot vegetable soup on the carp broth to the table.

Step 6: serve vegetable soup in a carp broth.
